Delicious Cinnamon Roll Muffins

Cinnamon rolls are a classic treat, but sometimes you just don't have the time or patience to make them from scratch. Luckily, cinnamon roll muffins combine all the flavors of a warm, gooey cinnamon roll with the convenience of a muffin! These soft, sweet, and perfectly spiced muffins are a fun twist on the traditional cinnamon roll and are sure to be a hit with everyone.

Ingredients:

For the muffin batter:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup sugar
  • 2/3 cup milk
  • 1/3 cup butter (melted)
  • 1 large egg
  • 1 teaspoon vanilla extract

For the cinnamon swirl:

  • 1/2 cup brown sugar (packed)
  • 1 tablespoon ground cinnamon
  • 2 tablespoons butter (melted)

For the glaze:

  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with butter or non-stick spray.

  2. Make the cinnamon swirl: In a small bowl, mix together the brown sugar and cinnamon. Add the melted butter and stir until combined. Set aside.

  3. Prepare the muffin batter: In a large bowl, whisk together the flour, baking powder, salt, and sugar. In another bowl, whisk the milk, melted butter, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

  4. Assemble the muffins: Spoon a little bit of muffin batter into the bottom of each muffin cup, just enough to cover the base. Then, spoon about 1 teaspoon of the cinnamon swirl mixture into each muffin. Top with more muffin batter, filling the cups almost to the top.

  5. Swirl it up: Use a toothpick or skewer to gently swirl the cinnamon mixture into the batter. Don’t overdo it – a few swirls are enough to give those delicious cinnamon roll layers!

  6. Bake the muffins: Place the muffin tin in the oven and bake for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.

  7. Make the glaze: While the muffins are cooling, mix together the powdered sugar, milk, and vanilla extract in a small bowl. If the glaze is too thick, add a little more milk to reach your desired consistency.

  8. Drizzle the glaze: Once the muffins have cooled for a few minutes, drizzle the glaze over the top. Serve warm and enjoy the cinnamon roll goodness in muffin form!

Tips:

  • You can use store-bought cinnamon rolls (the kind in a can) to make this recipe even easier. Just cut the dough into small pieces and layer them in the muffin tin.
  • Feel free to add nuts or raisins for extra texture and flavor.
